Visit to a traditional winery and holm oak grove in Guijuelo 

Our first stop will be in the town of Guijuelo , internationally renowned for the excellence of its Iberian ham. We will visit a traditional ham cellar , where you will learn firsthand about the entire production process: from the selection of the Iberian pigs to the slow curing in natural drying sheds and underground cellars. You will discover the respect for artisanal methods and the precise control of time and temperature that transform each ham into a gastronomic gem. 

The visit is complemented by an immersion in an authentic holm oak forest , the natural environment where Iberian pigs roam freely and feed on acorns during the montanera season. This ecosystem, unique to the Iberian Peninsula, is key to understanding the quality and flavor of acorn-fed Iberian ham. There, you will learn about the balance between sustainability, traditional livestock farming, and culinary excellence. 

Visit to Salamanca

After our experience in Guijuelo, we’ll head to the monumental city of Salamanca , declared a World Heritage Site by UNESCO in 1988. This city, one of the oldest and most prestigious in Spain, is also famous for its university atmosphere, its architectural legacy, and its vibrant cultural life. We’ll begin our tour in the Plaza Mayor , considered one of the most beautiful Baroque squares in Europe . Built between 1729 and 1755 by the architect Alberto de Churriguera , it was designed as a meeting place and a venue for celebrations. Its arcaded façades feature sculpted medallions depicting historical figures such as Cervantes, Charles V, and Christopher Columbus . Throughout the centuries, it has been the epicenter of life in Salamanca and today remains a vibrant place, full of cafes, shops, and social activity.

From there, we’ll head to one of the most fascinating religious complexes in the country: the Cathedrals of Salamanca . The city boasts two cathedrals joined in a single monumental complex , making it a unique architectural rarity in Europe. The Old Cathedral , begun in the 12th century , is a jewel of late Romanesque architecture with Gothic influences. Inside, highlights include the Main Chapel , the impressive dome vault (the Rooster Tower) , and the main altarpiece with more than 50 painted panels. The New Cathedral , whose construction began in the 16th century and continued until the 18th, reflects the transition from late Gothic to Renaissance and Baroque styles . It is imposing in its size and majesty and houses curious decorative elements such as the famous astronaut figure sculpted on its façade, added during a 20th-century restoration. Climbing its towers offers spectacular views of the entire city.

We will continue our stroll through the heart of the historic center, passing through the Arco del Corrillo , an ancient medieval gateway, which leads us to the Plaza del Corrillo , a historic meeting place that served as a market in the Middle Ages. Surrounded by arcades and traditional houses , this square still preserves vestiges of Romanesque and Mudéjar architecture and is an excellent example of Salamanca’s urban continuity since its medieval origins.

We will conclude our tour at one of Spain’s most unique civil buildings: the Casa de las Conchas (House of Shells ). Built between 1493 and 1517 by Rodrigo Arias de Maldonado , a knight of the Order of Santiago , this stately residence is notable for its façade decorated with more than 300 stone shells , the symbol of the order and the Camino de Santiago (Way of St. James ). Beyond its aesthetic value, the house reflects the rise of Salamanca’s noble families during the Renaissance. Inside, a courtyard with mixtilinear arches and ornate columns is preserved , and it currently functions as a public library , offering an interesting contrast between its history and its contemporary use.
